Healthy Low-Calorie Cole Slaw
Made with cabbage, carrots, and sweetcorn, it's a tasty and nutritious alternative to traditional cole slaw.

- 1/2 head cabbage shredded
- 1 carrot grated
- 1/2 cup sweetcorn
- 1 red pepper diced
- 1/4 cup cilantro chopped
- 2 tbsp. olive oil
- 1 tbsp. white vinegar
- 1 tsp. Dijon mustard
- 1/4 tsp. salt
In a large bowl, combine the cabbage, carrot, red pepper, 2. sweetcorn, cilantro and olive oil.
In a small bowl, whisk together the vinegar, Dijon mustard and salt.
Pour the dressing over the salad and toss to coat.
