Ingredients
  

  • 2 pounds potatoes
  • 1/2 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped parsley leaves
  • 1/4 cup cherry tomatoes quartered

Instructions
 

  • Preheat oven to 400 degrees F.
  • Peel and cube the potatoes.
  • Toss with olive oil and salt and pepper.
  • Spread in a single layer on a baking sheet and roast for 25 minutes, stirring once during cooking.
  • Stir in parsley leaves and cherry tomatoes and roast for an additional 5 minutes. Enjoy!
