Oven Roasted Potatoes
This oven roasted potatoes recipe is a healthy alternative to french fries or mashed potatoes. Potatoes are a good source of fiber, potassium, and vitamin C.

- 2 pounds potatoes
- 1/2 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped parsley leaves
- 1/4 cup cherry tomatoes quartered
Preheat oven to 400 degrees F.
Peel and cube the potatoes.
Toss with olive oil and salt and pepper.
Spread in a single layer on a baking sheet and roast for 25 minutes, stirring once during cooking.
Stir in parsley leaves and cherry tomatoes and roast for an additional 5 minutes. Enjoy!
