  • 1 tbsp. white vinegar
  • 1 tsp. Dijon mustard
  • 1/4 tsp. salt

  • In a large bowl, combine the cabbage, carrot, red pepper, 2. sweetcorn, cilantro and olive oil.
  • In a small bowl, whisk together the vinegar, Dijon mustard and salt.
  • Pour the dressing over the salad and toss to coat.
